The KORECH (the eating of the charoses). As bitter herbs are the symbol for suffering, so the sweet charoses is the symbol of the mortar that the Jewish people were forced to use as slaves in Egypt. Though bitterly enslaved, they looked forward in faith to the sweetness of the day when God would deliver them from bondage.
