The Karpas

One section of the Seder plate is reserved for the karpas or “greens.” Greens are symbolic of new life—the new life Jewish people received after God brought them out of Egypt.

The greens are eaten after being dipped in salt water, reminding the Jewish people of the tears that were shed during their ancestors’ 400 years of captivity. Some also use the salt water to remind the participants of the Red Sea crossing.
